Herb Infused Breakfast Casserole

Ingredients

8 store-bought onion rolls
1/4th cup roasted red bell peppers
6-8 spoons of salted butter
1 cup cream cheese
1 cup grated mozzarella cheese
2 cups milk
3-4 tablespoons basil pesto
2 spoons chopped fresh herbs, including parsley and oregano
Salt to taste
Cracked black pepper
10 large eggs

Directions

Prepare a baking dish by brushing it lightly with butter.

Preheat your oven to 350 F.

Tear the onion rolls into large sized chunks and place them at the bottom of the baking dish. Add the roasted red peppers over them, and layer cream cheese over the peppers. Sprinkled shredded mozzarella on top.

Mix together milk, basil pesto, and fresh herbs with salt and black pepper. Break in the eggs, and whisk them with other ingredients to combine everything well.

Pour the eggs over the onion roll and cheese mix. Cover with aluminum foil, and bake for 45 minutes. To give your casserole a nice golden crust, remove the aluminum foil, and bake uncovered for an additional 10 minutes.

Cut into individual portion sizes and serve warm.

Recipe Variations

In place of onion rolls, you can use plain bagels, cut into 1-inch pieces. Using bagels will give your casserole a crunchier texture.

You can use seasonings of your choice, such as crushed pepper flakes, cayenne or smoked paprika, Cajun spice, and more. Everything but bagel seasoning is a great choice for this casserole.
You could substitute with veggies of your choice. Baby spinach, arugula, sautéed mushrooms, etc. work well for this recipe.

Cooked and crumbled breakfast sausage or bacon enhances the flavor of this casserole and makes it more scrumptious.

Christmas brunch is a much-loved tradition in most families. Try out this hearty casserole, which is also a fabulous option if you’re looking for a make-ahead recipe so you can spend more time with your family on Christmas morning.
